EPISODE 5 - FAMILY BUSINESS: THE BUTCHER'S BLOCK

The D’Ambrisi Family knows a thing or two about meat, with Rudy D’Ambrisi starting a wholesale distribution for meat in New Jersey and New York more than 35 years ago. His sons now join him in the family business, with Rudy Jr helping with the wholesale operations and Tom growing the retail side by opening a sandwich and pizza shop in front of the butcher’s shop back in 2019.

When the Pandemic forced the closure of The Butcher’s Block Cafe, Tom D’Ambrisi took advantage to re-design the experience he wanted their customers to have - to connect the local butcher with the customer.

Fast forward to Spring 2022, the Butcher’s Block reopened to the public, featuring a whole animal butcher shop, a retail shop and a full-service restaurant. Restaurant diners are invited to hand select the steak they want to enjoy that evening from one of the many Dry Ager cabinets, which have been seamlessly integrated into the beautifully designed space. The steaks are finished off over a wood-burning, parrilla-style grill and served at the table on a sizzling cast iron platter, making the dining experience from butcher to table truly unique.
