You may have heard of this catchy tagline, “Fresh Is Boring,” coined by Instagram celebrity chef/fish monger Liwei Liao (appropriately known as the “Dry Aged Fish Guy”) as he brings the old-age technique to the forefront of the newest culinary trend: dry-aging fish.
From a young age, Liwei learned to fish from his father on the East Coast. After many years on the ocean, passionately learning how to properly catch, clean, butcher, preserve and cook fish, now you can find Liwei at his shop, The Joint Eatery, in Los Angeles where Liwei brings his take on the progressive fish market and restaurant vision to life.
Liwei works hard to educate customers and other chefs on how to utilize the dry aging technique to open up the culinary possibilities of the products the ocean brings to our kitchens and tables, keeping excellence and environmental sustainability always in mind. With zero waste, and some of the best restaurants in the country (including 3-star Michelin establishments) as his loyal customers, Liwei Liao’s vision has come full circle.
