CHARCUTERIE PARAMETERS

CHARCUTERIE PARAMETERS

We recommend a temperature of 8 °C and 75% RH for salami and ham.

For pre-curing salami, charcuterie (or ham/prosciutto) we recommend a temperature of 8-10 °C and humidity of 75% RH.

For this particular application some parameter changes need to take place. Please follow these instructions to change the parameters FLH and Fnc:

Charcuterie

1. plug out the device, wait 3 secs and plug it in once again

2. open the door, turn on the device (if it’s not already running again)

3. on the display you can see 6 buttons

4. press the button „arrow down“ + button „set%RH“ till you can see PR2 in the display

5. select with button „arrow down“ till you can see „Fnc“ in the Display and press the button „set%RH

6. change „Fnc“ from o-n to c-n with button „arrow down“ and confirm with the button „set%RH

7. select with button „arrow down“ till you can see „FLH“ in the Display and press the button „set%RH

8. change „FLH“ from 40 to 0 with button „arrow down“ and confirm with the button „set%RH

9. after two minutes the screen will go back to the normal home screen

Note: These parameters (FLH + Fnc) are only effective for pre-curing salami and ham.

10. Set the parameters to 8 °C and 75% RH

Dry Aged Meat

1. plug out the device, wait 3 secs and plug it in once again

2. open the door, turn on the device (if it’s not already running again)

3. on the display you can see 6 buttons

4. press the button „arrow down“ + button „set%RH“ till you can see PR2 in the display

5. select with button „arrow down“ till you can see „Fnc“ in the Display and press the button „set%RH

6. change „Fnc“ from c-n to o-n with button „arrow down“ and confirm with the button „set%RH

7. select with button „arrow down“ till you can see „FLH“ in the Display and press the button „set%RH

8. change „FLH“ from 0 to 40 with button „arrow down“ and confirm with the button „set%RH

9. after two minutes the screen will go back to the normal home screen

10. Set the unit to factory recommended dry aging parameters: 1.5 °C and 82% RH

The snowflake symbol and the sun symbol illuminated at the same time simply indicates that the unit is in Charcuterie mode. They will not be illuminated constantly, only at certain stages of the 6-hour cycle.
